Chicken & Fries Bread (Print Version)

# Ingredients:

→ Dough

01 - 175g fine semolina
02 - 225g flour
03 - 7g instant yeast
04 - 12g granulated sugar
05 - 7g salt
06 - 30ml olive oil
07 - 220ml water
08 - 40g butter
09 - 1 egg

→ Cheese Mixture

10 - 100g grated cheese
11 - 100g yellow onion
12 - 20g fresh parsley
13 - 2g ras el hanout

→ Chicken Mixture

14 - 20ml olive oil
15 - 500g chicken
16 - 5g ras el hanout
17 - 2g cayenne pepper powder
18 - 3g garlic powder
19 - 3g onion powder
20 - 1g dried chives
21 - 3.5g salt
22 - 30g mayonnaise
23 - 30g sweet chili sauce
24 - 15g sambal
25 - 35g red onion
26 - 75g green olives
27 - 100g cheddar cheese

→ Serving

28 - 650g fresh fries
29 - Sauce (for serving)
30 - Fresh vegetables (for serving)

# Instructions:

01 - In a large bowl, combine the semolina, flour, salt, sugar, yeast, olive oil, and lukewarm water. Mix well and knead for 10-12 minutes until you have a smooth dough.
02 - Cover the dough and let it rise in a warm place for about an hour, or until it has doubled in size.
03 - In a separate bowl, combine the grated cheese, yellow onion, parsley, and ras el hanout. Mix well and set aside.
04 - Once the dough has risen, punch it down gently and divide it into 9 equal pieces. Shape each piece into a ball.
05 - Using a rolling pin, roll each dough ball into a sheet about 17x20cm (roughly 7x8 inches). Melt the butter and brush it over the dough sheets. Sprinkle some of the cheese mixture on top of each sheet. Carefully fold and tuck the dough into neat bundles.
06 - Place the dough bundles on a baking tray lined with parchment paper. Brush them with beaten egg and sprinkle with the remaining cheese mixture. Let them rise again in a warm place for about 30 minutes, or until doubled.
07 - Preheat your oven to 200°C (390°F). Bake the bread bundles for 12-18 minutes, or until they are golden brown. Keep a close eye on them as baking times can vary. As soon as you take them out of the oven, cover them with a clean tea towel to keep them soft.
08 - Heat the olive oil in a frying pan over medium heat. Add the ras el hanout, cayenne pepper, garlic powder, onion powder, chives, and salt. Cook for 4-5 minutes. Stir in the mayonnaise, sweet chili sauce, and sambal. Mix well. Add the red onion and olives and cook for another minute. Remove from the heat and stir in the cheddar cheese (or your cheese of choice).
09 - Slice the baked bread and fill it with the chicken mixture, fresh fries, your favorite fresh vegetables, and any extra sauce you like. Enjoy this delicious and satisfying meal!
